Faye’s Easter Lemon Cake

Seeing as this cake has fruit (lemon) and flowers (primroses) in it… I suppose it is appropriate to post on a kitchen garden blog?? Happy Easter everyone!

Beagle Baking

This is the lemon cake my sister usually bakes for us every Easter – then she takes the rest of the year off… it is that long and hard… but it is so good.

She is out of the country in Belize this Easter so I made it in honour of her. It was a lazy version – just the sponge and half of the buttercream icing in the middle, not as good as her’s.

Serves 10

Cake: -450g (1 lb) butter, softened -450g (1 lb) caster sugar -8 eggs

-450g (1 lb) self-raising flour -Grated zest 3 lemons -Juice 2 lemons

Lemon butter icing: -70g (2 oz) butter, softened -140g (5 oz) icing sugar -Zest 1 lemon

-1 tbsp lemon juice

Lemon drizzle: -Juice 2 lemons -85g (3 oz) caster sugar

Lemon frosting: -175g (6 oz) icing sugar -1 tbsp lemon…
