Kidney Beans and Fried Onion
-Dash of olive oil, for frying -450g kidney beans (drained if canned, soaked and cooked if dried) -1 large onion, sliced
- Warm the olive oil in a frying pan. Add the onion and fry until just starting to turn golden.
- Add the kidney beans and turn the heat down to medium and heat for a couple of minutes.
- Remove from the heat and serve with a baked potato mashed with butter, a side salad or some veggies.
