Victoria Plum Crumble

We had a lot of plums this year, all from one Victoria tree (this is the tree I’ve nearly killed plenty of times).

We’ve made lots of plum jam but we quickly had to get a move on as they were rotting in the fridge so I made a plum crumble. It seems to have been a hit and here is the recipe if it tickles your tastebuds…

Victoria Plum Crumble

(Serves 6)

For the fruit: -1kg Victoria plums, de-stoned -3tbsp granulated sugar

For the crumble: -110g plain flour -55g granulated sugar -170g salted butter

  1. Preheat the oven to 180C.
  2. Place the fruit at the base of an ovenproof dish. Sprinkle the sugar generously over the top, and mix it in.
  3. In a bowl, using your fingers, rub the flour, sugar and butter together, so that the mixture resembles large breadcrumbs. Scatter the crumble over the top of the fruit.
  4. Place the dish in the oven and cook for about half an hour, until the fruit is hot and bubbling and the crumble is golden brown.
  5. Serve warm. Keep in the fridge for up to three days.

Recipe: Rhubarb and Blackberry Crumble

Never made this before…

We had a sudden influx of rhubarb and blackberries from a friend’s market. It was time to get inventive…

Rhubarb and Blackberry Crumble

Serves 6

For the Topping: – 170g plain flour – 110g salted butter (or unsalted with a good pinch of salt) – 55g caster sugar

 

For the fruit: -250g blackberries, washed -120g granulated sugar – 250g rhubarb, washed and cut into small strips, about 5cm long – 75g granulated sugar

 

  1. Place the blackberries in a small pan with 120g sugar. Bring to the boil and then simmer until the blackberries have broken down and become stewed fruit.
  2. Preheat the oven to 160C. On a baking tray, spread the cut rhubarb out and sprinkle 75g of sugar over the top generously. Put the tray in the oven and bake for about 20 minutes until the rhubarb is just starting to become tender. Remove the tray from the oven and put it to one side.
  3. Prepare the topping: In a large bowl, mix the flour, butter and sugar with your fingertips until it has a breadcrumb consistency. If the mixture is too dry, add a little more butter and a dash of sugar. Likewise, if it is too wet, add a little more flour and sugar to the mixture.
  4. Scrape the rhubarb into a oven-proof dish, followed by the blackberries. Scatter the crumble topping over the fruit, spreading it evenly and thickly.
  5. Bake the crumble in the oven for about 1 hour or until the top is golden brown and the fruit is bubbling. Serve warm.

Plums and Green Gages

All plums and gages are varieties of Prunus domestica. Gages (small, green plums) tend to be sweeter tasting and more spherical in shape than the darker purple plums, more popularly sold in UK stores therefore investing in your own gage tree at home in the garden is an excellent idea. Do not be put off by the bogey-like colour – they taste divine. 

Plum has many species, and taxonomists differ on the count. Depending on the taxonomist, between 19 and 40 species of plum exist. From this diversity only two species, the hexaploid European plum (Prunus domestica) and the diploid Japanese plum (Prunus salicina and hybrids), are of worldwide commercial significance. The origin of these commercially important species is uncertain.

Plums may have been one of the first fruits domesticated by humans. The most abundant cultivars have not been found wild, only around human settlements. Prunus domestica has been traced to East European and Caucasian mountains while Prunus salicina and Prunus simonii originated in Asia. Plum remains have been found in Neolithic age archaeological sites along with olives, grapes and figs.

It is considered plums came originally from Asia. They were likely first grown in China more than 2,000 years ago and made their way to Rome by 65 B.C. The fruit Prunus armeniaca gained its name from the beliefs of Pliny the Elder who was a Roman historian and scientist of the first century. He maintained the apricot was a kind of a plum, and had originally come from Armenia.

The plum is in fact closely related to the apricot and peach and numerous intermediary forms like Prunus simonii, the Apricot Plum. Prunus salicina, Asian plum native to China and Japan, has been in cultivation for thousands of years and was mentioned in the songs and writings of Confucius (551 BC – 479 BC). Although Pompey the Great is credited with introducing the cultivated plum to Rome in 65 BC, it is likely that wild plums were used by the peoples of southern Europe for many thousands of years. Wild plums flourished throughout the Old and New Worlds. In fact, the domestic plums we eat today descend from numerous sources.  Some sources believe the European plum was carried to Rome around 200 BC, then north to Europe. Others say that the Duke of Anjou carried the plum home as he returned from Jerusalem at the close of the Fifth Crusade (1198 to 1204 AD).

The French enthusiastically embraced the European plum during whichever scenario it arrived, using it in the kitchen as both fresh and dried as prunes. French immigrants carried plum pits to Quebec where a traveler recorded plum orchards flourishing as early as 1771. Plums came to North America with British settlers.

The markings on plum stones are unique to each variety, like a fingerprint. When Henry VIII’s ‘Mary Rose’ was raised after 450 years from the sea-bed, over 100 varieties of plum stones were discovered. It is an indication to how popular plums were in our diets during the Tudor period and are appreciation at the many different varieties on offer. It is a shame that instead of this giant figure increasing, we are lucky if we have more than 50 varieties available nowadays.

Plums are produced around the world, and China is the world’s largest producer, 6,100,000 tonnes during 2015.

Green Gages

Plums can be self-fertile but it is safer to purchase two, to make sure. ‘Victoria’ is a popular, reliable, high-yielding, self-fertile cooker and eater. ‘Marjorie’s Seedling’, a dark purple and another popular variety is a late-ripening, heavy-cropping type that can give your fruit as late as October. Other popular plums that will be recommended are ‘Czar’, blue plums for cooking that apparently thrive in poor soil; ‘Early Laxton’, a dessert plum with red flushed, yellow fruit yielding in mid to late summer; ‘Blue Tit’, a compact dessert plum with blue fruit in late summer.

For Green Gages, ‘Cambridge Gage’, partly self-fertile, green fruits, sweet; most reliable of the gages, but vigorous and needs a warm garden; ‘Imperial Gage’ is self-fertile and described as ‘reliable’; ‘Oullin’s Gage’ is self-fertile and recommended by River Cottage for cooking or eating fresh and flowers later so it may miss any late frosts – plum blossom is very early and delicate.

You must be warned that some plum varieties do refuse to pollinate each other. ‘Rivers’ Early Prolific’ and ‘Jefferson’ or ‘Cambridge Gage’ and ‘Old Green Gage’ are such examples. Check with your suppliers for further details.

Plums like fertile, well-drained soil in sunny, sheltered locations. They are particular about water- they like a reasonable amount during warmer months but despise waterlogged soils at any time of the year so a well-drained site is really ideal. Add plenty of organic matter if the soil is too dry to help the plant retain water in its roots. Feed and mulch the tree every spring to kick-start its blossom and fruit production and make sure you water in during dry spells, especially when it is settling in during the first year. The trees themselves are quite strong and hardy but unfortunately, the blossom is often early and hits the frost. Avoid frost pockets or windy sites and follow our crazy example of positioning ladders around the trees and wrapping the blossom very gently and carefully up in excessive amounts of horticultural fleece at night and then, using pegs, hoist it up during the daytime so pollinators can do their business.

A word on ‘Victoria’ plums – they are prone to such heavy cropping that their branches can snap if unsupported. This happened to our one a couple of years back when I foolishly removed some trees growing nearby that were supporting it. It has struggled on though like a brave soldier and produced an excellent crop this year.

Depending on the variety, location and type of plum, you can harvest from July to October. The first few fruits falling from the tree are a sign it is ready to start picking. Colour, squidgyness and ease of the plum being pulled from the tree branch is the next indicator. The fruit ripens very gradually over time so do not be too hasty – harvest every day whatever seems ready over time. Pick carefully to avoid bruising the fruit and try to leave a short stalk to keep the fruit and next year’s buds intact.

Silver leaf disease is the most likely nuisance for plum trees. Minimising pruning helps reduce the likelihood of this disease a lot. Brown rot, blossom wilt, bacterial canker and rust are also a possibility. Spots of gummy looking resin on the bark are a sign that the tree is under stress. Aphids can appear in early spring but rarely do more than cosmetic damage. Worst case would be larvae in some of the fruit.

100g of fresh plums also contain 350 IU Vitamin A, 10mg Vitamin C, Vitamin K, 150 mg of potassium and smaller amounts of B vitamins and other minerals.

Some plums are best eaten fresh, others need to be cooked. All plums can be frozen. The best way is to de-stone them and put the halves in freezer bags but if you don’t have time, you can freeze them whole and remove the stones once defrosted at a later date. I freeze most of my plums to make jams and save the fresh ones for people to eat or to make delicious plum crumble from.

I offer two recipes: my green gage jam (feel free to apply the same recipe for other plums or half and half) and plum crumble. Dig in.

Green Gage Jam

My favourite way to eat homemade green gages –  or plums –  is in jam.  Plums have an (almost) high amount of pectin in them so the jam should set without the aid of extra special pectin liquid however, I have been known to resort to using it in plum jam before so do not be afraid to do so yourself.

Serve the jam slathered thickly on buttered toast with a cup of tea on a sunny afternoon and you will be in heaven. 

(Makes 2.25kg worth)

  • 1 kg plums – 1kg granulated sugar – Juice of 1-2 lemons – 125ml Certo liquid pectin, optional
  1. Slice and remove the stones from the plums and place in a large pan. Add the sugar and lemon juice.
  2. Stir over a high heat and then allow the fruit to stew, checking the temperature with a jam thermometer. When it has reached boiling point, allow it to bubble furiously for at least ten minutes.
  3. Meanwhile, put a china plate inside the freezer so that it is cold. Spoon a small dollop of jam onto the plate and put it back in the freezer for a minute. Take it out and run a fingertip straight through the middle of the jam splodge on the plate. If the jam ‘crinkles’ and leaves a trail as you push your fingertip through, then it is done. If it doesn’t, continue to boil the jam and check in this manner until it is ready.
  4. Once done, turn of the heat and if using, add the liquid pectin and stir in before you allow the jam to cool slightly.
  5. Bottle in steralised jars and store in a cool, dry place overnight. You can use them from the next day onwards.

Plum Crumble

Traditional plums look gorgeous in a crumble – the red juice makes it look so pretty – but mixing in some green gages as well takes the dish to a whole new sweet level and I urge you to try it at lease once!

(Serves 6

– Lots of plums, about 1kg – Caster/ granulated sugar, to sprinkle over the plums

For the crumble topping: – 170g plain flour – 110g salted butter – 55g caster/ granulated sugar

  1. Preheat the oven 150C.
  2. De-stone the plums and cut into halves or segments. Place them in an oven-proof dish. Sprinkle a generous amount of caster or granulated sugar over the top of each layer of plums as you put them in. You want to have a nice thick layer of fruit as it is going to decrease in size during the cooking process.
  3. Put the flour into a bowl followed by the sugar and salted butter. Rub together using your fingertips until the mixture resembles large bread crumbs (add more butter if too dry and more flour if too sticky). Sprinkle the crumble topping over the top of the plums that have been placed in layers inside the dish.
  4. Bake in the oven for about 45 minutes – 1hr, or until hot and golden brown on top and the fruit is cooked underneath (once done, you can turn off the oven and leave the crumble inside to stay warm until you are ready to eat it). Serve hot with custard.

I always see blackberries as an autumnal fruit to forage and pick from the many brambles in the garden so it always surprises me when they are ready in July or August. We have been picking blackberries to eat raw for some time but I did get round to making an early apple and blackberry crumble from some early windfalls from our neighbours – if you cook them well enough, they taste fine.

Apple and Blackberry Crumble

(Serves 6)

– About 1kg cooking apples – About 200g-300g blackberries – Caster/ granulated sugar, to sprinkle over the fruit

For the crumble topping: – 170g plain flour – 110g salted butter – 55g caster/ granulated sugar

  1. Preheat the oven 150C.
  2. Peel and core the apples before cutting them into slices. Place them in an oven-proof dish. Add the blackberries and mix in so that the layers are combined.
  3. Sprinkle a generous amount of caster or granulated sugar over the top and mix into the layers. You want to have a nice thick layer of fruit as it is going to decrease in size during the cooking process.
  4. Make the crumble topping: put the flour into a bowl followed by the sugar and salted butter. Rub together using your fingertips until the mixture resembles large bread crumbs (add more butter if too dry and more flour if too sticky). Sprinkle the crumble topping over the top of the sugar coated fruit inside the dish.
  5. Bake in the oven for about an hour or until hot and golden brown on top and the fruit is cooked. Once done, you can turn off the oven and leave the crumble inside to stay warm until you are ready to eat it. Serve hot with custard.

Rhubarb

We finally got round to harvesting some of our rhubarb, a vegetable masquerading as a fruit, a couple of weeks ago. We have quite a lot ready for picking this year…

Rhubarb contains a good amount of fibre, hence why it was used in ancient Chinese medicine for soothing stomach ailments and constipation. 122g of rhubarb provides 45% of your daily amount of vitamin K, which supports healthy bone growth and limits neuronal damage in the brain. It contains vitamin C,  A (the red stalks provide more of this than the green ones, good for vision, protection against cancers, good skin and mucus membranes), B vitamins, as well as other nutritional benefits such as iron, potassium, phosphorous, manganese and folate. A serving of cooked rhubarb provides us with as much calcium as a cup of milk would and is on the short list alongside salmon and spinach for food that provides us with the most calcium.
Rhubarb was a native of Siberia, found growing on the banks of the river Volga. The earliest recordings of rhubarb date back to 2700BC in China although it is believed that it was used as a drug even before this date. The plant was cultivated for medicinal purposes, particularly as an ailment for gut, liver and lung conditions. Marco Polo is attributed with bringing rhubarb, or ‘Rhacoma’ root, as a drug to Europe during the thirteenth century. The plant was so popular that in England during 1657, its asking price was three times that of Opium. The rise of modern medicine after the sixteenth century and the failure of the British trying to introduce the wrong strain of rhubarb to use as a drug replaced the root’s use for healing.

The first recorded planting of rhubarb in Europe was in Italy in 1608. It was not until 1778 that the plant was recorded as being grown for food in Europe. It was not until the Chelsea Physics Garden discovered forcing rhubarb in 1817, when some roots were accidentally covered with soil during the winter, that the vegetable became a British favourite. When the gardeners removed the soil, they discovered some tender shoots growing. These were found to have a superior taste, gaining favour with the public as commercial growers began to adopt the technique. The earliest cooking method of eating rhubarb was in tarts and pies.

The forcing of rhubarb began in 1877 in Yorkshire, where the famous Yorkshire Rhubarb of course sprouts from. The Whitwell family are acknowledged as being the first family to produce enough rhubarb to out-sell the London markets. Special sheds were built for growing rhubarb in, prolonging the season. Yorkshire is an ideal place for growing rhubarb as it possesses the ideal requirements for growing the crop: cold, wet and a good deal of nitrogen in the soil. The quality of the Yorkshire crop became renowned and other markets could no longer compete and ceased altogether. The production of rhubarb centralised between Leeds, Wakefield and Bradford, becoming ‘The Rhubarb Triangle’, the centre for the world’s production of forced rhubarb.

During the Second World War, rhubarb became diet staple as the government charged a shilling per pound of Yorkshire rhubarb to keep it financially available. The rhubarb industry became one of the largest providers of employment during these years. Despite this, sugar was difficult to get hold of and the sharp taste of rhubarb needs to be softened by this particular ingredient. After being a nutritious part of the human diet during the 1940s, rhubarb’s popularity dropped due to the undesirable memories of war-time children who had to suffer the strong taste of rhubarb for too long. When the war was over and overseas refrigerators became available along with the chance to purchase and store exotic, tropical fruits, rhubarb was abandoned in the garden and the producers began to suffer huge losses, some going bankrupt, some selling their businesses.

Despite the decline, rhubarb is starting to raise itself up again. More and more chefs are advertising new recipes to include rhubarb in – one does not have to restrict themselves to using it in a crumble, although that can be one of the most yummy, traditional ways of using it, as long as you remove the fuzzy feeling you can get on your teeth by not sweetening it enough. All of my latest cookery finds have some ingenious ideas for using this beautiful pink and green vegetable masquerading as a fruit: cakes, fools, pies, tarts, steamed puddings, stewed on its own and served with another pudding like a cheesecake, soufflés, grunts, muffins, jams, jelly, yoghurt, ice cream, raw rhubarb sorbet… The list goes on.

We were given various rhubarb plants by friends last year so I do not know the names of all of them. However, I am pretty sure we have bought ourselves ‘Champagne’, ‘Victoria’ (fruits later) and ‘Timperley Early’ (produces earlier than most varieties and does have a fairly high chilling requirement so it is suitable for cold areas).

You can buy young crowns of rhubarb or established ones. When buying young crowns, allow the plant to establish for a year in the soil before harvesting from them. Rhubarb likes to be planted in rich, well-manured soil in the full sun and water through dry periods. Allow 90cm between plants.

Forcing rhubarb: In Yorkshire, the plants are grown in a field for  two years before being brought indoors each winter after a cold period to induce dormancy. The warm sheds encourage the plants to awaken but light is excluded, making the plant resort to its own glucose reserves in its base to feed the early growth of the new stalks. Without the light, the rhubarb grows a livid pink colour and is more sweeter and succulent than the versions not forced. It is romantically harvested by candlelight as strong light halts growth. We can replicate Yorkshire’s forcing techniques simply at home. Place a rhubarb forcer or, in our case, a large bucket over the small crowns in late winter after piling fresh manure around it (this raises the temperature and the speed of growth). Forcing rhubarb will give you hopefully a harvest four or five weeks ahead of the main harvest time.

Depending on the variety of the plant and the weather, one can start harvesting rhubarb in March until the end of July. You need to stop picking as the plant growth slows down to allow it to store reserves of energy for growth the following year. Choose tender stalks. These are stems with good colour, where the leaves have just unfolded fully. Do not cut the stems. Instead, grasp the chosen stem low on the plant, give a sharp pull and twist in order to remove it cleanly. Rip  the leaves off and discard into the compost heap – don’t give them to the animals as they are poisonous, despite what my pigs might say after breaking out and rampaging the neighbour’s crops of rhubarb and our own, they love it!

As far as pests and diseases go, there are not too many threats for this vegetable. If you notice limp foliage, weak steams nad new buds dying during the growing season your plant could have fungal disease, crown rot. You just have to be brave and discard the plant and purchase new crowns for planting.

If flowers appear on your plants (they did on a couple of ours last year), cut them off as they reduce the vigour of the part of the rhubarb you want to eat. In the autumnal months, remove the withering leaves and add well-rotted manure and mulch to encourage them for the next season.

So now I can finally offer you pudding recipes. I love puddings, especially homemade ones. I eat one after supper without fail every night for ultimate comfort and although it is often a cake, or something covered in chocolate, that I have made, I do love a good fruity pudding and I have recently purchased the ‘Puddings’ cookbook by Johnny Shepherd. He is obviously a fan of rhubarb and includes a fair number of interesting recipes involving it. Instead of launching straight into crumbles or rhubarb cakes, I played around with his recipe for rhubarb fool  first of all before going for the crumble. I have had the best rhubarb crumbles at school. I was never too keen on the dishes they served but their chocolate sponge and custard (of course), jam roly poly, macaroni cheese, baked potatoes, apple crumble and, finally, rhubarb crumble with custard were all delicious. The thing I never liked about rhubarb crumble was the fuzzy texture you get on your teeth after eating it. There is little you can do about this other than to use a good amount of sugar, to cook it well or to peel off the outsides and to serve it with something like custard to combat the texture. When making the crumble this year, I decided to try roasting it first of all using Shepherd’s technique to see if this would help. It did reduce it quite a lot and it was delicious and went down a treat with the family.

By the way, we just picked some strawberries and ate them with homemade chocolate cake with some pouring yoghurt last night – delicious! I am going through a real strawberry phase at the moment. My favourite breakfast is strawberry and rhubarb yoghurt and if I get enough strawberries (those pesky birds ate most of them  last year), then I would love to try making strawberry and rhubarb conserve, just to try. They making a surprisingly delicious match.

Here is my adaption of Johnny Shepherd’s fool recipe and my rhubarb crumble. I never took an photographs of my fool as it tasted amazing and looked revolting so I have included his photo instead to inspire rather than put you off. The crumble is my own though.

Rhubarb and Cardamom Fool

(Serves 6)

For the rhubarb: – 500g rhubarb, washed and cut into 5cm batons – 175g caster or granulated sugar – 10 cardamom pods, cracked

For the custard: – 315ml double cream – 3-4 large egg yolks – 48g caster sugar

– 300ml double cream

  1. Preheat the oven to 160C. On a non-stick baking tray, lay out the rhubarb and cardamom seeds, sprinkling 75g of the sugar over the top. Bake in the oven for about 20 minutes or until the rhubarb is soft and tender.
  2. Meanwhile, make the custard: Put the cream into a non-stick saucepan over a medium flame and bring to the boil. Take the pan off the heat.
  3. Whisk the egg yolks and the sugar together in a bowl. Pour the hot cream over the top, whisking all the time. Pour the mixture back into the saucepan and place over a medium flame, whisking, until the custard is thick and coats the back of a spoon. Leave the pan to cool slightly before putting it in the fridge to chill completely.
  4. Return to the baked rhubarb once it is done in the oven. Pour the excess liquid from the tray through a sieve into a saucepan. Discard the cardamom pods. Heat the saucepan of liquid on the stove over a high flame to reduce it to a thick syrup. Remove from the heat and stir in the rhubarb along with the remaining 100g of sugar. Place to one side and allow to cool before keeping it in the fridge until fully chilled.
  5. In a large bowl, whisk the 300ml of double cream to soft peaks.
  6. Once you are ready to serve, remove the custard and the rhubarb from the fridge and combine. Carefully fold the cream into the rhubarb and custard to create a rippled effect. Serve in bowls.

Homemade Rhubarb Crumble

(Serves 6)

For the Topping: – 170g plain flour – 110g salted butter (or unsalted with a good pinch of salt) – 55g caster sugar

For the fruit: – 400-500g rhubarb, washed and cut into small strips, about 5cm long              – About 75g caster or granulated sugar – 100g caster or granulated sugar

  1. Preheat the oven to 160C. On a baking tray, spread the cut rhubarb out and sprinkle 75g of sugar over the top generously. Put the tray in the oven and bake for about 15 minutes until the rhubarb is just starting to become tender. Remove the tray from the oven and put it to one side. Turn the oven up to 180C.
  2. Pour the juice of the rhubarb into a small saucepan. Place over a medium heat and allow it to bubble until it has turned into a thick syrup. Turn down the heat to simmer and stir in 100g sugar and the rhubarb. Remove from heat.
  3. Prepare the topping: In a large bowl, mix the flour, butter and sugar with your fingertips until it has a breadcrumb consistency. If the mixture is too dry, add a little more butter and a dash of sugar. Likewise, if it is too wet, add a little more flour and sugar to the mixture.
  4. Scrape the rhubarb into a oven-proof dish. Scatter the crumble topping over the fruit, spreading it evenly and thickly.
  5. Bake the crumble in the oven for about 30 minutes or until the top is golden brown and the fruit is bubbling. Serve warm with custard.
