It has been a dream for a long time. I use tinned tomatoes from the shop so often and I was feeling very guilty. It is so easy to make at home, and yet I have never tried it!
Finally did it today, so I can cross that off my bucket list 😉
Garden is surviving – too many beans to pick 😦 Did not get a lot achieved this week as I ended up helping my mum fix the road (long story) and getting lost on a dog walk with my siblings and carrying a heavy beagle back to the car (long story).

A pumpkin is a cultivar of a squash plant, most commonly of Cucurbita pep, that is round, with smooth, slightly ribbed skin, and deep yellow to orange colouration. The thick shell contains seeds and pulp. Some exceptionally large ones are derived from Cucurbita maxima. In NZ and Australia, the term pumpkin generally refers to the broader category called winter squash elsewhere.
Native to North America pumpkins are widely grown for commercial use and are used both in food and recreation. Pumpkin pie is a traditional part of Thanksgiving meals in the US although commercially canned pumpkin puree and pumpkin pie fillings are usually made from different kinds of winter squash than the pumpkins frequently carved as for decoration at Halloween. Pumpkins, like other squash, are thought to have originated in North America. The oldest evidence of pumpkin-related seeds dating between 7000 and 5500 BC was found in Mexico. Since some squash share the same botanical classifications as pumpkins, the names are frequently used interchangeably. One often-used botanical classification relies on the characteristics of the stems: pumpkin stems are more rigid, prickly, and angular (with an approximate five-degree angle) than squash stems, which are generally softer, more rounded and more flared where joined to the fruit. Pumpkin fruits are a type of botanical berry known as a pepo. The word pumpkin originates from the word pepon which is Greek for “large melon”, something round and large. The French adapted this word to pompon, which the British changed to pumpion and to the later American colonists became known as pumpkin. Traditional C. pepo pumpkins generally weigh between 3 and 8kg (6 and 18 lb), though the largest cultivars, C. maxima, regularly reach weights of over 34 kg (75 lb). The color of pumpkins derives from orange carotenoid pigments, including beta-carotene found in carrots, provitamin B compounds converted to vitamin A in the body.
Pumpkins are a warm-weather crop that are usually planted in early July. The specific conditions necessary for growing pumpkins require that soil temperatures 8cm (3 in) deep are at least 15.5C (60F) and soil that holds water well. Pumpkin crops suffer if there is a lack of water or because of cold temperatures and sandy soil with poor water retention or poorly drained soils that become waterlogged after heavy rain. Pumpkins are, however, rather hardy, and even if many leaves and portions of the vine are removed or damaged, the plant can very quickly re-grow secondary vines to replace what was removed. The thing I most fear for our pumpkins is powdery mildew – Powdery Mildew.
Pumpkins produce both a male and female flower. Bees play a significant role in the fertilisation of the flowers. Pumpkins have historically been pollinated by the native squash bee, Peponapis pruinosa, but this bee has declined, probably at least in part to pesticide sensitivity. Today most commercial plantings are pollinated by honeybees. One hive per acre (4,000 m2 per hive, or 5 hives per 2 hectares) is recommended by the US Dept. of Agriculture. If there are inadequate bees for pollination, gardeners often have to hand pollinate – inadequately pollinated pumpkins usually start growing but abort before full development.
To grow pumpkins, plant one seed in a tall yoghurt container filled with good compost, puncture a hole in the bottom of the pot to allow water to drain through, in April. Plant 1.5cm, 1/2 inch, deep (deep as your thumb) and firm the soil over the top. Keep well watered and put on a warm, sunny windowsill in your house. Take it off the windowsill at night to keep it warm. Transplant outdoors in May or when the frosts are over, spacing 1.2m (4’) apart. Keep moist and well fed – I feed mine lots of manure throughout the season because of my sandy soil that leaks away the nutrients – pumpkins are hungry plants. To prevent the fruit from rotting, gently lift from the ground and place a brick or large stone underneath them. Careful not to damage the stem. Harvest once they are turning orange all over, September – November and before the first frosts. The most obvious clue is to look at the stem as if it has died off and turned hard you know that the fruits are ready. Other ways of telling that the moment of truth has arrived is to slap the fruit (it should sound hollow) and to push your thumbnail into the skin, which should dent but not puncture. Cut the stalks a good 4 inches from where it joins the fruit. Wash the fruit with soapy water containing one part of chlorine bleach to ten parts of water to remove the soil and kill the pathogens on the surface of the fruit. Make sure the fruits are well dried. Then you need to cure it. Curing involves the hardening the skins to protect the flesh inside from deterioration. Do it properly and you can expect fruits to stay in top form for at least three months, comfortably taking you to the first harvests of next spring. Remove the fruits to a greenhouse or as sunny a windowsill as you can find having first brushed off any dirt. Allow your fruits to sunbathe and develop a tan! This should take about two weeks for the top of the fruit then once carefully flipped over, another two weeks for the bottom. Pumpkins and winter squash prefer a well-ventilated, dry place. Keep the fruits raised up off hard surfaces on racks or wire mesh with a thick layer of newspaper or straw. Keeping them off the ground will allow air to circulate around the fruits while the extra padding will prevent the skin softening and becoming vulnerable to infection.
The best pumpkin variety I’ve tried so far are ‘Racer’.
The practice of carving pumpkins for Halloween originated from an Irish myth about a man named Stingy Jack. The turnip has traditionally been used in Ireland and Scotland at Halloween, but immigrants to North America used the native pumpkin, which are both readily available and much larger, making them easier to carve than turnips. Not until 1837, does jack-o’-lantern appear as a term for a carved vegetable lantern and the carved pumpkin lantern association with Halloween is first recorded in 1866. In the United States, the carved pumpkin was first associated with the harvest season in general, long before it became an emblem of Halloween. In 1900, an article on Thanksgiving entertaining recommended a lit jack-o’-lantern as part of the festivities to encourage families to join together to make their own jack-o’-lanterns. Association of pumpkins with harvest time and pumpkin pie at Thanksgiving reinforce its iconic role. Pumpkin chunking is a competitive activity in which teams build various mechanical devices designed to throw a pumpkin as far as possible. Catapults and air cannons are some of the common mechanisms. Some pumpkin chunkers breed and grow special varieties of pumpkin under specialized conditions to improve the pumpkin’s chances of surviving a throw.
Pumpkin seeds, leaves, and juices all pack a nutritional punch. Pumpkin has a range of health benefits, including being one of the best-known sources of beta-carotene and are a good source of fibre -one cup of cooked pumpkin is 2.7kg of fibre. Pumpkins have been found to reduce blood pressure, reduce risk of cancer, combats diabetes and supports your immune system.

Mustard plants are any of several plant species in the genera Brassica and Sinapis in the family Brassicaceae. Mustard seed is used as a spice ( Collecting Mustard Seeds). Grinding and mixing the seeds with water, vinegar, or other liquids, creates the yellow condiment we buy from the supermarkets. The seeds can also be pressed to make mustard oil, and the leaves can be eaten as mustard greens.
The word mustard is derived from the Latin mustum or must, the grape juice that the Romans mixed with honey and the ground seeds of the mustard plant (sinapi) to create their mustum ardens, or ‘burning must’.
Some varieties of mustard plants were well-established crops in Hellenistic and Roman times but it is historically noted that: “There are almost no archeological records available for any of these crops”. Wild forms of mustard and its relatives, the radish and turnip, can be located in west Asia and Europe, suggesting that their domestication took place somewhere in that area. However, historians have concluded: “Suggestions as to the origins of these plants are necessarily based on linguistic considerations”. Encyclopædia Britannica states that mustard was grown by the Indus Civilisation of 2500-1700 BCE. According to the Saskatchewan Mustard Development Commission, “Some of the earliest known documentation of mustard’s use dates back to Sumerian and Sanskrit texts from 3000 BC”.
The mustard plant was brought to Britain by the Romans via France and there are numerous Roman recipes that use mustard as an ingredient. However serious mustard production was first recorded in France in the 9th century, usually based in religious establishments and this then spread to Britain in the 9th century. By the 14th century mustard was being grown in various parts of the country including the area around Tewkesbury, where the mustard was mixed with horseradish and took the name of the town. Most mustard produced in the Middle Ages was based on using the whole or crushed seeds, mixing them with liquid and letting the mix mature. The mix was often dried, making it easier for transportation, and then liquid added again when required for use.
In the 18th century, with the developments in milling techniques the husks of the seeds could be more easily removed and the seeds finely ground. The first record of the production of mustard flour is credited to Mrs Clements of Durham in 1720 who managed to keep the milling technique used a secret for some time allowing Durham to become the centre of mustard production in the country and allowing herself to accumulate considerable sums of money selling her mustard flour. Once her milling secret was discovered, other entrepreneurs began to invest in mustard production. Most notable in the 19th century was Jeremiah Colman who began milling mustard at his flour mill in Norwich. His mustard became the English mustard, a finely milled flour, yellow in colour (assisted by the addition of turmeric) and very hot in taste.
Mustard is now a world-wide condiment and there are numerous companies involved in making, using and marketing the product. The whole or ground seeds are still an important ingredient in cooking, especially in India and Asia, while in Europe and the Americas the processed seeds are still used as a table condiment.
There are three main varieties: white (Brassica alba) brown (Brassica juncea) and black (Brassica nigra).
Recent research has studied varieties of mustards with high oil contents for use in the production of biodiesel, a renewable liquid fuel similar to diesel fuel. The biodiesel made from mustard oil has good cold flow properties and cetane ratings. The leftover meal after pressing out he oil has also been found to be an effective pesticide.
We use mustard as green manure. Green manure is created by leaving uprooted or sown crop parts to wither on a field so that they serve as a mulch and soil amendment. Typically, they are ploughed under and incorporated into the soil while green or shortly after flowering. Green manure is commonly associated with organic farming and can play an important role in sustainable annual cropping systems.The value of green manure was recognized by farmers in India for thousands of years, as mentioned in treatises like Vrikshayurveda. In Ancient Greece too, farmers ploughed broad bean plants into the soil. Chinese agricultural texts dating back hundreds of years refer to the importance of grasses and weeds in providing nutrients for farm soil. It was also known to early North American colonists arriving from Europe. Common colonial green manure crops were rye, buckwheat and oats. Incorporation of green manures into a farming system can drastically reduce, if not eliminate, the need for additional products such as supplemental fertilizers and pesticides.
Benefits of using mustard or any other crop as a green manure:
When allowed to flower, the crop provides forage for pollinating insects. Green manure crops also often provide habitat for predatory beneficial insects, which allow for a reduction in the application of insecticides where cover crops are planted.
Suppresses other weeds from growing.
Green manure acts mainly as soil-acidifying matter to decrease the alkalinity/pH of alkali soils by generating humic acid and acetic acid.
Incorporation of cover crops into the soil allows the nutrients held within the green manure to be released and made available to the succeeding crops. This results from an increase in abundance of soil microorganisms from the degradation of plant material that aid in the decomposition of this fresh material.
Releases nutrients that improves the soil structure.
Reduces likeliness of plant or insect disease, notably verticillium wilt of potatoes.
Used for animal grazing, especially poultry.
Contains nitrogen that fertilises the soil without the need of commercial products.
So I’ve continued to harvest mustard seeds to put in homemade curries, but my mum has gone one step further – she has started harvesting little young mustards and adding them to her egg sandwiches at lunch time. Here is her recipe:
Egg and Mustard Green Sandwich
-1 egg -2 slices of bread (or 1 large cut in half) -Butter -1 tbsp mayonnaise -1 handful of mustard -Lettuce, tomatoes or other salad, to serve
Bring a pan of water to the boil. Stick a pin into the top of the egg and remove. Put the egg into the pan of boiling water and leave until it has become a hard boiled egg (completely solid). This could be between 5-10 minutes.
Remove from the heat, drain the hot water and cover the egg in cold water, leaving it to cool.
Spread butter over the bread so that both halves of the bread are covered on one side.
Once cold, remove the egg from the pan and peel away the shell. Cut the egg into thin slices, then dice so that it is in lots of cubes.
Mix the egg into the mayonnaise and then spread over the buttered bread. Add the mustard greens on top. Close the sandwich and serve with salad.
The beetroot is the taproot portion of the beet plant, usually known in North America as the beet, also table beet, garden beet, red beet, or golden beet. It is one of several of the cultivated varieties of Beta vulgaris, grown for their edible taproots and their leaves, beet greens. Beta is the classic Latin name for beets, possibly Celtic origin before becoming bete in Old English in the 1400s.
Other than as a food, beets have use as a food colouring and as a medicinal plant. From the Middle Ages, beetroot was used as a treatment for a variety of conditions, especially illnesses relating to digestion and the blood. Bartolomeo Platina recommended taking beetroot with garlic to nullify the effects of “garlic-breath”. Many beet products are made from other Beta vulgaris varieties, particularly sugar beet. During the mid-1800s, beetroot juice was used to colour wine. Beetroot can also be used to make wine nowadays completely, no longer just an addition to the drink made from grapes.
I’ve only ever used ‘Bolthardy’ but I think that it is a brilliant variety. Very rich, dark pinky-red colour, tastes pretty good and lasts in the ground for a long time. I grew too many two years ago and had loads left over in the ground (seeing as only three people in my family liked beetroot then). I thought they would just rot and I would give them to the pigs in winter, but they didn’t. I have been pulling them up two summers on. The outside is as rough as I thought it would be so I discard them, but the inside is still usable. Of course, I would recommend harvesting them in their first season as that will be when they are most delicious!
Another variety I have seen in a vegetable garden lately is candy coloured beetroot – white with pink swirls in it, called ‘Chioggia’. It is very pretty and tastes good too.
To grow beetroot seeds, sow thinly, March-July, where they are to crop, 2.5cm (1″) deep, directly into finely-prepared, well-cultivated, fertile soil, which has already been watered. Allow 30cm (1′) between rows. I discovered that mine grew so much better when the ground was fed with well rotted manure. Beetroots can be grown in shade, but they seem to prosper more in direct sunlight. Keep them shaded when starting off with horticultural fleece. Regular sowings every three weeks should ensure a continuous supply of young beetroots. Harvest June-October. Harvested roots can be stored in dry sand for winter use.
Usually the deep purple roots of beetroot are eaten boiled, roasted or raw, either alone or combined with any salad. A large proportion of the commercial production is processed into boiled and sterilised beets or into pickles. In Eastern Europe, the beetroot soup borscht is popular. In India, chopped and spiced beetroot is a delicious side dish. A traditional Pennsylvania Dutch dish is picked beet egg. Hard-boiled eggs are refrigerated in the liquid left over from pickling beets and allowed to marinate until the eggs turn a deep pink-red colour. In Poland and Ukraine, beet is combined with horseradish to form popular cwilka. This is traditionally used with cold cuts and sandwiches or added to a meal consisting of meat and potatoes. In Serbia cvekla is used as a winter salad, seasoned with salt and vinegar, alongside meat dishes. As an addition to horseradish it is also used to produce the “red” variety of chrain, a popular condiment in Eastern European cuisine. A slice of pickled beetroot is combined with other condiments on a beef patty to make an Aussie burger. When beet juice is used, it is most stable in foods with a low water content, such as frozen novelties and fruit fillings. Beatnins, obtained from the roots, are used industrially as red food colouring e.g. to intensify the colour of tomato paste, sauces, desserts, jams and jellies, ice cream, sweets, and breakfast cereals.
Oldest archeological proofs that we used beetroot in ancient times were found on the Neolithic site of Aartswoud in the Netherlands and in Saqqara pyramid at Thebes, Egypt, which dates from third millennium BC. There are Assyrian texts that say that beetroots were growing in the Hanging Gardens of Babylon in 800 BC. We can be positive that Mesopotamia knew about beetroots at that time because of these texts. Ancient Greeks cultivated beetroot around 300 BC but didn’t use the roots of the plants, only eating the leaves. They still respected the root and offered it to the sun god, Apollo, in the temple of Delphi and also considered it to be worth its weight in silver. Hippocrates used leaves of beetroot for binding and dressing wounds while Talmud, written in 4th and 5th century, advises eating beetroot, among other things, for longer life. Romans ate the roots but mainly for medicinal purposes. They used it as a laxative or to cure fever. Some used it as food as Apicius, the famous Roman gourmet, wrote a book called “The Art of Cooking” and in it gave recipes with beetroots used in broths and salads with mustard, oil, and vinegar. The root part of the beet was cultivated for consumption in either Germany or Italy, first recorded in 1542. The Elizabethans enjoyed them in tarts and stews. Medieval cooks stuffed them into pies. All these uses were an old variant of beetroot which was long and thin like a parsnip. This variety is thought to have evolved from a prehistoric North African root vegetable. The one that we know today appeared in the 16th and 17th century in Europe. It needed a few hundred years more to become popular in Central and Eastern Europe where new cuisines with beetroot started appearing. In 1747 a chemist from Berlin discovered a way to produce sucrose from beets. His student, Franz Achard, perfected this method for extracting sugar, leading him to predict the inevitable rise of beet beer, tobacco and molasses, among other products. The King of Prussia subsidized a sugar beet industry. The first plant was built in what is now western Poland. Today, around 20 percent of the world’s sugar comes from sugar beets. Beet sugar production requires 4 times less water than sugar cane production, making it an attractive crop throughout Europe. In Victorian times, beetroot was used to bring color to an otherwise colorless diet and as a sweet ingredient in desserts. Industrialisation allowed for easier preparation and conservation of vegetables, so beetroot became more available. The rosy betalain-rich juice of red beets was used as a cheek and lip stain by women during the 19th century, a practice that inspired the old adage “red as a beet.” Food shortages in Europe following World War One caused illnesses, including cases of mangel-wurzel disease. It was symptomatic of eating only beets. After the Second World War, because of the rations in some places, the most available vegetable was pickled beetroot in jars.
The beet greens (leaves) are also edible. The young leaves can be eaten raw as part of a leafy salad whilst the older ones are better boiled or steamed, like cooked spinach. I find that the leaves are very strong tasting and don’t particularly like them. But my poultry love them. Do not cut the leaves, but twist them off to prevent the colour ‘bleeding’.
Many complain that beets have an “earthy” taste, which isn’t far off the mark. Beets contain a substance called geosmin, which is responsible for that fresh soil scent in your garden following a spring rain. Humans are quite sensitive to geosmin, even in very low doses, which explains why our beet response ranges from one extreme to the other.
They are rich in antioxidants, folic acid, potassium, and fiber. They also contain unique antioxidants called betalains, which are currently being studied as a potential weapon in the fight against cancer. Beetroot can lower blood pressure and may increase blood flows to the brain thereby preventing dementia. A 2010 study carried out by Queen Mary’s University in London found that drinking just one 250ml glass of beetroot juice a day dramatically lowered blood pressure for several hours. Nitrates lower blood pressure because bacteria in the mouth and gut convert it into the gas nitric oxide, which relaxes and widens the blood vessels, allowing blood to circulate more freely. Tests were conducted to see if beetroot would effect athlete’s performances. Athletes could run faster after drinking beetroot juice and cyclists racing in high altitudes had quicker finishing times, averagely 16 seconds quicker after drinking beetroot juice too. Betacyanin, the pigment that gives beetroot its rich hue, is a powerful antioxidant that has been shown to possess anti-cancer properties. In 2011, a study carried out by Howard University in Washington, USA, found that betacyanin slowed tumour growth by 12.5 per cent when exposed to prostate and breast cancer cells. I remember reading an interview a while ago in the Telegraph about tennis player Ross Hutchins who suffered from a variety of cancer. He had beetroot and orange juice every morning and evening. ‘Even when I was feeling really ill, I made sure I nailed eight beetroots a day,’ he says. The red colour compound beatnin is not broken down in the body, and in higher concentrations may temporarily cause urine or stools to assume a reddish colour, in the case of urine a condition called beeturia.
I really didn’t like beetroot. I really intensely disliked it. The first time I got myself to like beetroot was when it was grated with a leafy green salad alongside a baked potato with cheese and baked beans. I had to finish everything on my plate, including the beetroot, but surprisingly, I actually came round to it. It was ok grated into tiny pieces, not so earthy and overpowering. I was pretty happy as it meant I could grow it in the garden and actually eat it. They didn’t convert me into a radish or fennel fan, but beetroot was good enough. I have been harvesting my two year old beetroots and enjoying them at last.
Sprinkle grated beetroot over mashed avocado on toast, it looks beautiful. Another thing I like is grated beetroot sprinkled on top of toast that has been covered with butter and a poached egg yolk (I don’t like egg whites. I’m sorry I’m so fussy…).
Cranberries are a group of evergreen dwarf shrubs or trailing vines in the sub-genus Oxycoccus of the genus Vaccinium. Cranberries are creeping shrubs or vines up to 2 metres (7 ft) long and 5 to 20 centimetres (2 to 8 in) in height. They have wiry stems and small evergreen leaves. The flowers are dark pink, with very distinct reflexed petals. The fruit is a berry that is larger than the leaves of the plant. It is initially light green, turning red when it is ripe. It has an acidic taste that can overwhelm its sweetness.
Most cranberries are processed into products such as juice, sauce, jam, and sweetened dried cranberries (see useful recipe for these below), with the remainder sold fresh to consumers. Cranberry Sauce (see recipe below) is a traditional accompaniment to turkey at Christmas dinner in the UK, and at Christmas and Thanksgiving dinners in the US.
The name cranberry derives from ‘craneberry’, first named by early European settlers in the US who believed the expanding flower, stem, calyx, and petals resembled the neck, head, and bill of a crane. Another name used in northeastern Canada is mossberry. The traditional English name for cranberries is fenberry, originated from plants found growing in fen (marsh) lands. In 17th-century New England cranberries were sometimes called ‘bearberries’ as bears were often seen feeding on them.
American Indians enjoyed cranberries cooked and sweetened with honey or maple syrup—a cranberry sauce recipe that was likely a treat at early New England Thanksgiving feasts. By the beginning of the 18th century, they were being exported to England by the colonists.
Cranberries were used by the Indians decoratively, as a source of red dye, and medicinally, as a poultice for wounds since not only do their astringent tannins contract tissues and help stop bleeding but we now also know that compounds in cranberries have antibiotic effects.
Although several species of cranberries grow wild in Europe and Asia, the cranberry most cultivated as a commercial crop is an American native, which owes its success to Henry Hall, an gentleman in Dennis, Massachusetts. In 1840 he noticed an abundance of large berries grew when sand was swept into his bog by the prevailing winds and tides. The sandy bog provided just the right growing conditions for the cranberries by stifling the growth of shallow-rooted weeds, enhancing that of the deep rooted cranberries. Cranberry cultivation spread across the US, but also across the sea to Scandinavia and the UK. Cranberries became popular for wild harvesting in the Nordic countries and Russia. In Scotland, the berries were originally wild-harvested but with the loss of suitable habitat the plants have become so scarce that this is no longer done. The berries arrived in Holland as survivors of a shipwreck: when an American ship loaded with crates filled with cranberries sank along the Dutch coast, many crates washed ashore on the small island of Terschelling. Some of the berries took root and cranberries have been cultivated there ever since.
Historically, cranberry beds were constructed in wetlands. Today’s cranberry beds are constructed in upland areas with a shallow water table. The topsoil is scraped off to form dykes around the bed perimeter. Clean sand is hauled in and spread to a depth of four to eight inches. The surface is laser levelled flat to provide even drainage. Beds are frequently drained with socked tile in addition to the perimeter ditch. In addition to making it possible to hold water, the dykes allow equipment to service the beds without driving on the vines. Irrigation equipment is installed in the bed to provide irrigation for vine growth and for spring and autumn frost protection.
To grow at home: if you can grow rhododendrons or blueberries in your garden soil, cranberries should succeed. Otherwise, grow plants in pots, hanging containers or raised beds in ericaceous compost. Water with rainwater, not ‘hard’ tap water. Compost should be moist at all times, not waterlogged and should never dry out. Peg down or bury long, trailing stems – these will root over time. Feed during the growing season, if growth is poor with a little hoof and horn (15g per sq m) or sulphate of ammonia. Old beds can be revitalised by covering them with a 14mm (½in) layer of sharp sand in spring and working the sand down between the stems.
Propagation: peg down trailing stems from March to June, to encourage rooting.
Little pruning is required, other than to remove any excessively long and congested arching growth in early spring. Trim out straggly roots after harvesting.
Cranberries need organic, rich, moist to boggy acidic soils, ideally at pH 4.5, in an open, sunny site. Although they like constantly moist conditions, plants should sit above the water. Plant in garden soil, providing it is suitable. Alternatively, dig a trench 90cm (36in) wide by 30cm (12in) deep and line it with heavy duty polythene or pond liner, fill it with ericaceous compost for acid loving plants and soak with rainwater before planting or create a raised bed, 30cm (12in) deep. Plant at a spacing of 30cm (12in) in and between the rows in from October to December, in mild spells in winter or in March and April.
As far as pests are concerned, cranberries are vulnerable to primarily birds. We netted ours as soon as berries appeared this year and fortunately managed to harvest the (few) all (our cranberry bushes were only just planted last season so to get a few berries was pretty wonderful). Harvest from late-September to mid-October, when the berries are red and prise easily from the plant. They can be frozen or eaten straight away. We froze our few this year to add to my dad’s wonderful yearly Christmas creation of Cranberry Sauce for our Christmas Day dinner (see recipe below).
RHS recommended varieties:
‘Pilgrim’:We have two of these. Ideal for container growing, fruits ripen from July to September.
‘Early Black’: Early harvesting, small and deep red; ideal for sauces and for baking.
‘Redstar’: Ideal for window boxes or containers, dark pink flowers are followed by bright red fruits.
‘Stevens’: Mid season with large, red fruit.
Raw cranberries have moderate levels of vitamin C, fibre and the essential manganese (each nutrient having more than 10% of the Daily Value per 100 g serving, as well as other essential micronutrients in minor amounts). As fresh cranberries are hard and bitter, about 95% of cranberries are processed and used to make cranberry juice and sauce. They are also sold dried and sweetened.
For many years, researchers believed that the ability of cranberries and cranberry juice to help prevent urinary tract infections (UTIs) was partly related to the strong acidity of the cranberries. Recent research has shown that it’s not the acidity of the cranberries, but the unusual nature of their proanthocyanidins (PACs) that is related to prevention of UTIs. The special structure of these PACs (involving A-type linkages between their components) acts as a barrier to bacteria that might otherwise latch on to the urinary tract lining. For the cardiovascular system and for many parts of the digestive tract (including the mouth and gums, stomach, and colon) cranberry has been shown to provide important anti-inflammatory benefits. It’s the phytonutrients in cranberry that are especially effective in lowering our risk of unwanted inflammation, and virtually all of the phytonutrient categories represented in cranberry are now known to play a role. These phytonutrient categories include proanthocyanidins (PACs), anthocyanins (the flavonoid pigments that give cranberries their shades of red), flavonols like quercetin, and phenolic acid (like hydroxycinnamic acids). Dietary consumption of cranberry has also been shown to reduce the risk of chronic, unwanted inflammation in the stomach, large intestine (colon) and cardiovascular system (especially blood vessel linings). Drinking a little cranberry juice now and then seems to be a good idea…
So if you don’t fancy your cranberries raw, try making your own cranberry juice (if you have enough to spare), perhaps a Cranberry Sauce instead of Redcurrant Jelly for your roasts (see recipe below) or dry them out like you would to make apple rings and use them in a bread recipe or follow my Christmas Brownie and Walnut Cake recipe and serve them alongside it for a delicious dessert (you don’t have to wait until Christmas for it!).
Dad’s Cranberry Sauce
(Makes 4x 350g jars)
-900g fresh/frozen cranberries -Juice of 2 oranges -150g granulated sugar
Place the cranberries in a large pan.
Add the juice of the oranges to the pan followed by the sugar.
Bring everything up to simmering point, stir well, put a lid on the pan and let it all simmer for about 20 minutes, or until the cranberries are breaking down. Stir now and then.
Remove the pan from the heat. When it is cool enough to handle, scrape into sterilised jam jars. Store in the fridge. For freezing, when cool transfer the relish to a plastic container and freeze.
Christmas Brownie Walnut Cake with Dried Cranberries
Preheat the oven to 180C. Line a 23cm/9inch cake tin with baking parchment.
Melt the chocolate in a heatproof bowl in the microwave. Melt the butter and add to the chocolate mixture.
Whisk the eggs and sugar together until the mixture is pale and thick enough to hold a trail when the beaters are removed. Mix in the chocolate and butter mixture.
Add the flour, baking powder and cocoa powder, mixing to combine.
In a food processor or nut grinder, grind the walnuts. Mix into the other ingredients thoroughly.
Pour the mixture into the prepared cake tin. Bake in the oven for 40-45 minutes until the cake has a nice crust on the outside but is slightly soft in the middle. When you cut into it to serve, it should gradually get gooey-er as you go further into the middle, the brownie element of the cake. Leave to cool in the tin.
Dust with icing sugar and scatter dried cranberries in the middle for decoration. Serve these cranberries alongside the slices. Store in an airtight container.
So there are plenty of fruits and vegetables in the world and only so many hours to talk about how to store them. Perhaps we should start with what is around right now and work from there?
Salad leaves – Lettuce, rocket, watercress and other cresses, like land cress or crinkle cress, (watercress wilts quickest) and spinach (wilts second quickest) are best eaten straight away once they have been picked and washed. To store it, I put mine in containers in the fridge mostly because I know I will be using it over the next few days. Other people keep theirs in plastic bags or between kitchen roll. If you have left the salad out for too long and it has wilted, leave it in a bowl of cold water to rejuvenate it before refrigerating it immediately. You can freeze green leaves, like spinach or lettuce but they will be incredibly soggy and are only useful for cooking. You might as well stick to fresh leaves rather than freezing them.
Carrots – If you are using them over a couple of days then they can be again kept in the fridge in a plastic bag or a container. Otherwise, the traditional way of storing them is in a cool, dark place in a box filled with dry sand. This can also be done to swedes, celeriac, sweet chestnuts, parsnips, celery and beetroot (celery will keep in the fridge for ages. Swedes and celeriac can be left in the ground for months at a time).
Peas – Best eaten as soon as they have been podded if consumed raw. If they are slightly too old to be delicate enough to eat raw, pop them into a pan of boiling water for 2 minutes, drain and serve. To freeze them, once you have boiled them, place them in freezing ice-cold water for a few minutes until cool. Place them in plastic bags ideal for the freezer, make sure no air has been caught inside. Freeze them and use over the next few months. This is the same technique for runner beans, broad beans or sweetcorn (by the way, sweetcorn loses its taste rapidly after being picked. It needs to be cooked and eaten or frozen asap).
Onions – Once pulled out of the ground, lay them out on newspaper to dry out, turning them over so that both sides are dealt with. Then, suspend them from the ceiling in a cool room or inside hessian/netted sacks. We use our utility room as it is very cool and is not too light.
Garlic – harvest the bulbs whole from the ground and place in a cool, dark place. We keep ours on a low-down shelf in out kitchen. When using, take one segment from the entire garlic bulb at a time, peel and use. From my experience, homegrown garlic tends not to keep as long as shop bought garlic so only pull them up from the ground a little at a time, don’t be tempted to harvest them all at once.
Potatoes – I worked out last year that potatoes can be left in the ground for a long time and you do not need to rush to dig them up unless you have a wire worm or slug problem. Even if they have blight, they will keep better in the ground rather than out of it. However, to store them once they have been harvested, copy the same technique used for drying onions, laying them out on newspaper and turning them over. Then put them inside hessian sacks in a dark place, like a cupboard under the stairs to prevent them from turning green and becoming unusable.
Berries – If you can’t eat them all fresh at once because you have a glut or want to spread them out for later in the year, freeze them in plastic bags or containers once they have been washed and slightly dried. To use them, defrost well and drain the excess liquids that will taste a little to fridgey. Some berries like raspberries, blueberries or grapes should taste fine uncooked once they have been frozen. Other berries, like strawberries, have such a high water content that they will taste strange once defrosted raw. I prefer to use my frozen fruit for jam or inside cooked puddings, like muffins, cakes, stewed fruit dishes, crumbles or pies. I save the fresh fruit for eating uncooked.
Summer squashes: Courgettes – You might have been starting to pick some already. These are best sliced from the plant, washed and cooked straight away but can be stored in the fridge for a couple of days, depending on the variety and the ripeness of the vegetable. Best stored in an air-tight container or a plastic bag. Boil, fry, grill or roast them. Courgettes cannot be frozen because of their high water content, much like strawberries. Winter squashes (e.g. Butternut squashes and pumpkins can be frozen once they have been roasted – Slice, into small pieces, lay out on a baking tray and drizzle generously in olive oil. Roast in a preheated oven of 180C for about 40 minutes or until they are browned. Allow to cool. Place in plastic bags and freeze straight away). Courgettes and cucumbers will only become sloppy mush when frozen so do store them only in the fridge or eat straight away.
Cabbages: Can be stored whole in the fridge for a few days. If the outer leaves start to brown, wilt too much or go mushy, peel them off and discard them and use the rest if unaffected. If cooked, cabbages can last in a container for about three days. This is the same for cauliflower and broccoli (broccoli seems to brown slightly quicker out of the two when stored in the fridge).
Spring Onions – Can be kept in the fridge for a couple of days. If the outside skin starts to dry up or the stem wilts too much, cut and peel the outside coating off and use what is underneath if it is unaffected.
Radishes – Likewise, they can be stored whole in the fridge or cut up and kept raw in a container for about two or three days before they will start to brown and become un-appetising.
Kale – Store in an air-tight container, raw, for up to a week maximum inside the fridge. Once cooked, store in a container for two or three days in the fridge.
Oriental greens – Think Pak Choi, Tatsoi, Komatsuna, Chinese Cabbage, Mibuna, Mitzuna, Mizpoona… Once cooked, they can be stored for about two days. Raw, they might be able to last a little longer in the fridge before they wilt or turn to liquid. Treat them more like spinach, liable to becoming soggy after some time being picked.
Tomatoes – It might be slightly early to write about tomatoes but it is getting close enough. I did not know until last year that tomatoes keep their looks and taste longer if stored outside the fridge. Gardner James Wong (‘Grow for Flavour’) suggests keeping them in a fruit bowl. We tried this last year and it does work well. It also allows some of the slightly under-developed ones to ripen. If freezing the tomatoes, dunk them briefly into a pan of boiling water to shed their skins before placing them into cold water, likewise for the beans and peas. Store in plastic bags in the freezer and use in dishes where you would use cooked/tinned tomatoes or make tomato chutney.
