Butternut Squash and Chickpea Tagine recipe

We’ve had some sad looking butternut squashes staring at us in the kitchen for a while and I finally took pity and tried out making my own quick tagine-styled dish. It is really good and not at all hard so give it a go if you have a squash glowering at you from the fridge!

Butternut Squash and Chickpea Tagine 

Serves 6

-1 small butternut squash/ 1/2 a large one -1 onion, finely sliced -Olive oil, for frying in -1 garlic clove, finely diced -16 cherry tomatoes or 4 large tomatoes, sliced -450g cooked chickpeas -Rice, to serve -Greens, to serve

  1. Cut up the butternut squash and remove the peel. Cut into fine chunks and fry in the olive oil with the onion, continually stirring so that the squash cooks, but does not burn. Fry for about 5-10 minutes, or until the squash is browning slightly and is cooked through.
  2. Add the diced garlic followed by the tomatoes. On a high heat, stir the mixture like you did when frying the squash. You want the tomatoes to start to break down and release their juices, but not to burn. This could take between another 5-10 minutes.
  3. Add the chickpeas and mix in well.
  4. Serve with rice and greens. Also lovely with sweet potato.

Carrots

Not to try and scare fellow gardeners but hey, its not far off till March – the biggest sowing month of the year!

This is when my sowing indoors becomes nuts, but because of the frosts there is little you can sow directly outdoors at this time of year still.

What you can sow are the hardy things like Broad Beans, winter Salad – Lettuce, Meteor Peas … but they all need to be sown under horticultural fleece and, ideally, a cold frame.

But do you know what is a good idea to sow directly outdoors first thing in the season, that has to remain under the cover of fleece the whole year round thanks to pesky flies? Carrots.

Carrots don’t like to be transplanted, they need a lot of time to develop, and need covering from carrot flies anyway so why not make a little bed and sow some seeds?

To make you want to grow your own carrots, here is a recipe to get you enthusiastic. Do you know what carrots go great in? Bolognese.

*To make it vegetarian, omit the meat. You can put pre-soaked or canned kidney beans in instead, but you don’t need to add more protein if you are serving it with grated cheese.*

Veggie version – with kidney beans instead of mince

Spaghetti Bolognese 

Serves 4-6

-Olive oil, for frying -1 large onion, finely sliced -4-6 giant carrots, or the equivalent as small ones -2 garlic cloves, finely diced -x2 450g cans of tinned tomatoes -500g beef mince (optional) -Dash of soy sauce -Dash of Lea and Perrins Worcester sauce -Pinch of salt -Pinch of pepper -Spaghetti, to serve (about 500g) -Peas, runner beans or broccoli, to serve -400g grated cheddar cheese, to serve

  1. Warm the olive oil in a large frying pan. Fry the onion and the grated carrot together, stirring the contents. You want the carrot to lose some of its orange colour, to cook, but you don’t want it all to burn.
  2. Once the carrot is cooked, add the tinned tomatoes and the diced garlic. Mix in well.
  3. In a separate frying pan, fry the mince meat if using. Once cooked, add to the sauce, or if using kidney beans, drain if from a can and add to the sauce straight away instead. Mix well.
  4. Add the flavourings and stir. Leave it to come to the boil and then turn the flame down and allow it to simmer.
  5. Meanwhile, cook the spaghetti in boiling hot water until cooked through. Bring another pan to the boil and cook the greens.
  6. Serve with a helping of spaghetti and greens, the bolognese on top, and a good helping of grated cheddar.
  7. Left overs can be used for chilli con carne (just add diced chilli) or for lasagne.

Aubergine (Eggplant) Curry

I am going through a bit of an aubergine (eggplant) phase.

This curry is quick, simple and delicious with some rice and parsley and most of the ingredients can be sourced from your own veg patch.

Aubergine Curry

Serves 2

-1 large aubergine, de-stalked and cut into medium sized pieces -Coconut oil, for frying -1 large onion, finely sliced -2 cloves of garlic, diced -1 1/2tsp mustard seeds -1tsp nigella seeds – 1tsp coriander seeds -1/2 tsp ground turmeric -1 1/2 tsp garam masala -4 large tomatoes/ 8 cherry tomatoes, cut into pieces -2 handfuls of parsley, to serve -Rice, to serve

  1. Preheat the grill to high. Place the aubergine under the grill and toast until lightly charred on each side. Set aside.
  2. Put the coconut oil in a frying pan and add the onion. Fry until turning golden, then turn the heat down to simmer.
  3. Add the mustard, nigella and coriander seeds. Mix and simmer for a couple of minutes before adding the ground turmeric and garam masala, followed by the garlic. Mix.
  4. Add the chopped tomato and turn the heat up. Keep stirring. The aim is to get the tomatoes to break down as much as possible before serving.
  5. Cut the aubergine into small pieces and mix into the curry. Keep stirring for a few minutes until the tomatoes have released their juices and broken down so that the ingredients look combined.
  6. Serve with fresh parsley scattered on top alongside rice (or I have had it with potatoes, to make it extra home-grown magic).

Recipe: Baked Potatoes and Kidney Beans

This is a really nice, warming, simple dish to make. Depending on what you have growing in your garden, most of the ingredients can be sourced from there too!

You can vary this vegetarian meal entirely. You could add other greens like spinach, kale, swiss chard, pak choi to the gloop. You could add soy sauce, Lea and Perrins, salt and pepper, maple syrup or other seasonings. You could add chilli. You could add some melted cheese to the final plate or find some meat for a meat-eater. Add some herbs from the garden too? This is just a simple, basic recipe which apart from baking the potatoes which takes time, is really quick to make and very nutritious too.

Home grown potato, runner beans, onion and garlic (not tomatoes or kidney beans this year…)

Baked Potatoes and Kidney Beans

(Serves 2-4)

-1 baking potato per person -Olive oil -1 onion -2 garlic cloves -450g tomatoes (tinned or prepared to be cooked like tinned ones) -400g kidney beans (tinned or ready cooked) -Butter -Runner beans or peas

  1. Preheat your oven to 200C. Wash and poke holes in your potatoes and bake in the oven for about 1-2 hours.
  2. To make the kidney bean dish, slice the onion up thinly. Fry gently in a pan of olive oil. Dice the garlic and add it to the pan before tipping in the tomatoes. Bring to the boil and stir the ingredients together. Add the kidney beans to warm them through.
  3. Boil a pan of water and cook sliced runner beans or peas. Drain.
  4. Remove the potatoes from the oven and cut in half. Mash each half with a generous amount of butter. Add the greens to the side of the plate along with the kidney bean dish. Enjoy. Store the left over kidney bean gloop in the fridge for up to three days in a sealed container.

March – sowing and growing

There are too many plants that can be started off indoors/outdoors in March to name! But here are a few to get you started…

Spinach – Salad – Spinach – planted out ‘Turaco’ spinach sown last autumn in a cold frame with fleece and started off indoors ‘Barbados’ and ‘Emelia’, onto ‘Samish’ soon…

Lettuce- Salad – Lettuce – planted out lettuce sown last winter in the cold frame with the spinach and sown some seeds indoors

Radishes – Salad – Radish – sown outdoors under fleece between other crops

Celery – Celery – batch sown indoors

Squashes – have yet to plant ‘Honey Bear’ and ‘Sunburst’

There are bound to be plenty more veggies to sow/plant out as we plough on through the first month of spring. Temperatures are finally warming up but hang onto some fleece – the fruit trees might be lured into a false spring, deadly for blossom and fruit production… Make sure anything you sow outside/ plant out is wrapped up under cover, nice and snuggly. It will be a shock to the system if they are exposed to Britain’s ‘spring time’ too early!

Recipe: Fried courgette-tomato sauce with spaghetti

This is a fancy version of my easy-peasy pasta and tinned tomatoes (Salad – Rocket), a sort of Mediterranean pasta dish. I have made it with courgettes and red pepper before but as I have so many courgettes at the moment and not a single red pepper grown yet, we had this dish the other night minus the pepper and it was just as delicious and exotic. Lovely and flavoursome. It used up lots of courgette. Serve it with lots of runner beans if you have a glut of those too!

Fried courgette-tomato sauce with spaghetti 

(Serves 6)

– 400g spaghetti – Olive oil – 1 onion, sliced – 2 garlic cloves, diced – 3 medium sized courgettes, sliced into circles – 1/2 red pepper, sliced into small pieces (optional) – 200g kale, swiss chard or spinach, washed with stalks removed and leaves shredded (optional) – 900g tinned tomatoes – Salt and pepper (optional) – Grated cheddar cheese, to serve – Peas or runner beans, to serve

  1. Bring a large pan of water to the boil. Put the spaghetti into the water and turn it down to simmer for ten minutes or until the pasta is soft and cooked. Drain and pour a small amount of olive oil over the top, stirring it in. Set aside.
  2. In a frying pan, fry the onion in olive oil over a high flame before turning it down as it starts to brown to simmer. Add the cut up courgettes and red pepper to the frying pan and leave until starting to char.
  3. Once the vegetables are slightly brown, add the tinned tomatoes and diced garlic, stirring them in. Add the kale/ swiss chard/ spinach and turn the heat up to high, stirring. Allow the greens to cook for a couple of minutes before turning down to simmer for about 5-10 minutes, adding the salt and pepper beforehand.
  4. Meanwhile, grate up a generous amount of cheddar cheese to serve and put another pan of water onto boil. Once the water has reached boiling point, cook peas or sliced runner beans to serve alongside.
  5. Serve the sauce over the top of the spaghetti with cheddar cheese and green vegetables on top.
